This rich, creamy dessert pairs perfectly with sweet summer strawberries. It's made from 100% whole foods, so go back for seconds!
Ingredients
- 1 cup unsweetened non-dairy milk
- ½ ripe avocado, peeled and pitted
- ½ cup raw cashews
- ⅓ cup unsweetened cocoa powder
- ½ cup dates, soaked in water for 30 minutes
- 1 teaspoon vanilla extract
- 2 cups strawberries, trimmed and sliced
Instructions
- Put the "milk", avocado, cashews, cocoa, soaked dates, and vanilla extract into a blender and puree on high for 30 to 60 seconds until smooth and creamy. You may need to stop and scrape down the sides with a spatula.
- Transfer the mousse to glasses, ramekins, or jars and chill in the fridge for at least 3 hours.
- Top each mousse with sliced strawberries, and enjoy!
