These sandwiches are low maintenance and simple to throw together, they make fantastic leftovers, and there’s no need to fuss over how pretty (or “unpretty”) they look.

A healthy, plant-based spin on the Sloppy Joe. Enjoy these simple, savory sandwiches!
Ingredients
- 2 cups green lentils, uncooked
- 1 onion, diced
- 1 cup frozen bell pepper strips
- 2 cloves garlic, minced
- 2 tablespoons chili powder
- 1 teaspoon paprika
- 1 15-oz. can fire-roasted tomatoes
- ¼ cup tomato paste
- 2 tablespoons balsamic vinegar
- salt and pepper to taste
- 8 whole grain buns
- Optional: pickled jalapeños
Instructions
- Put the lentils in a small sauce pot and cover with water by about 2 inches. Cover and bring to a boil. Lower heat and simmer for about 20 minutes, until lentils are tender. Drain and set aside.
- While lentils are cooking, heat a deep skillet over medium heat. Add a splash of water. Sauté the onion and pepper until softened. Add the garlic and sauté a minute more. Add the cooked lentils, the chili powder, paprika, fire-roasted tomatoes, tomato paste, and vinegar. Simmer until thickened. Assemble sandwiches.
