Valentine's Day Beet Balls

These lentil beet balls are the perfect topper for pastas and salads.
  • 1 pound beets, peeled
  • 4 cups cooked lentils
  • 1 medium yellow onion, peeled and cut into quarters
  • ½ cup silken tofu
  • 1.5 cups quick cook oats
  • 2 tablespoons tomato paste
  • 2 tablespoons Italian seasoning
  • 2 teaspoons salt
  • 1 teaspoon pepper
  1. Preheat oven to 400F and line a baking sheet with parchment paper.
  2. Shred beets and onion in food processor.
  3. Add oats, and spices. Pulse until evenly incorporated. Transfer to a large mixing bowl.
  4. Add silken tofu to the food processor and blend until smooth. Add to mixing bowl.
  5. Combine cooked lentils with everything in the bowl, and stir until well-mixed.
  6. Form mixture into balls (about 2 tablespoons) and place them on prepared baking sheet.
  7. Bake for 30 minutes.
