Asian-inspired vegan bowl that packs a punch for even the hungriest dudes.
Sesame Ginger Miso Sauce
  • Juice of 2 limes
  • 2 dates, pitted
  • 1" fresh ginger, peeled
  • 4 tablespoons tahini
  • 3 tablespoons white miso
  • 2 tablespoons soy sauce
  • black pepper to taste
  • cayenne to taste
  • ¾ cup water
  • 4 servings soba noodles
  • ½ cup pepitas
  • 2 cups shelled edamame
  • 1 bag frozen brocoli
  • 4 green onions, chopped
  • 2 large sweet potatoes, cubed
  • 1 cup cilantro, chopped
Sesame Ginger Miso Sauce
  1. Combine all in ingredients in a blender and blend until smooth. As water as needed for desired consistency.
  1. Preheat oven to 425 F.
  2. Roast cubed sweet potatoes until slightly browned.
  3. Cook soba noodles according to instructions on the package. Make sure to break up noodles that are stuck together.
  4. In a large skillet or wok, add frozen brocoli and edamame and cook until thawed.
  5. Add sweet potatoes, noodles, and sauce to the skillet, mixing until evenly heated.
  6. Garnish with pepitas, green onions, and cilantro.
