Ever since we started minimizing the amount of dairy we eat (click to read why), yogurt no longer makes the grocery list. The absence of this breakfast staple has left us heavily relying on oatmeal. I mindlessly ruled out parfaits, smoothies and overnight oats- assuming the yogurt was the pillar of these breakfast staples.
With the weather warming up, a cold breakfast tempts me much more than a warm-n-cozy bowl of hot cereal. So, a 4-ingredient overnight experiment produced the perfect seasonal breakfast- Vegan Overnight Oats. No yogurt necessary.
It’s funny how something so simple can feel so novel.
- ½ cup old-fashioned oats
- 1 cup nondairy milk
- 1-2 tablespoons ground flaxseed
- ½ cup fruit
- Nuts/nut butter
- Sweetener: stevia, honey, maple syrup
- Shredded coconut
- Dried fruit
- Cocoa powder
- Combine all ingredients in a bowl and stir.
- Cover and refrigerate overnight.
- Add any additional toppings and enjoy!
