I hacked this recipe after having something similar at a restaurant. I usually don’t get these right on the first try, but this time I did. We loved it. Enjoy!
Sesame Ginger Miso Manly Bowl

Asian-inspired vegan bowl that packs a punch for even the hungriest dudes.
Ingredients
Sesame Ginger Miso Sauce
- Juice of 2 limes
- 2 dates, pitted
- 1" fresh ginger, peeled
- 4 tablespoons tahini
- 3 tablespoons white miso
- 2 tablespoons soy sauce
- black pepper to taste
- cayenne to taste
- ¾ cup water
Bowls
- 4 servings soba noodles
- ½ cup pepitas
- 2 cups shelled edamame
- 1 bag frozen brocoli
- 4 green onions, chopped
- 2 large sweet potatoes, cubed
- 1 cup cilantro, chopped
Instructions
Sesame Ginger Miso Sauce
- Combine all in ingredients in a blender and blend until smooth. As water as needed for desired consistency.
Bowls
- Preheat oven to 425 F.
- Roast cubed sweet potatoes until slightly browned.
- Cook soba noodles according to instructions on the package. Make sure to break up noodles that are stuck together.
- In a large skillet or wok, add frozen brocoli and edamame and cook until thawed.
- Add sweet potatoes, noodles, and sauce to the skillet, mixing until evenly heated.
- Garnish with pepitas, green onions, and cilantro.
