By the time this post hits your eyes, I’ll be hiking my way to a Colorado summit or crawling around Fort Collins’ selection of world-class breweries. Maybe both. Either way, this seasonal version of my favorite bars will be in tow- in quantities large enough to share.
Fall PROBARs

Whole food snack bars with a fall flavor twist.
Ingredients
- 1 cup whole pecans
- 1 cup raw pumpkin seeds
- 1 cup ground flaxseeds
- 16 small died black mission figs
- 6 pitted dried dates
- 1 cup dried cranberries
- 2 cups old-fashioned oats
- ¼ cup brown rice syrup
- ¼ cup maple syrup
- 1 tablespoon ground cinnamon
- ½ tablespoon nutmeg
Instructions
- Preheat oven to 350F and lightly grease or line a 9" x 7" baking dish with parchment paper.
- Soak dates and figs in a bowl of water.
- Grind flax seeds in coffee grinder.
- Combine pecans, pumpkin seeds, flax seeds, oats into a food processor. Pulse until pecans are mostly chopped in quarters. Pour the mixture into a large mixing bowl.
- Combine dates, figs, and cranberries into the food processor. Process until the mixture turns into a paste.
- Add fruit mixture and syrups to the large mixing bowl. Mix until brown rice syrup is evenly distributed to bind all ingredients together. I've found that this step is best done with your hands!
- Firmly press mixture into pan/baking dish with a spatula.
- Bake for 15 minutes.
- When cool, cut into bars.
