Almond Joy Overnight Oats

Almond Joy Overnight Oats - a cool, satisfying summer breakfast full of chocolate flavor and shredded coconut.
  • ½ cup old-fashioned oats
  • 1 tbsp ground flaxseed
  • 1 cup unsweetened soy/nut/rice milk
  • 1 tbsp cocoa powder
  • ½ banana
  • 1 tbsp almonds
  • 1 tbsp shredded coconut
  1. The night before: Combine all ingredients (except the banana and almonds) in a bowl and stir. Cover and refrigerate overnight.
  2. In the morning: Peel and slice the banana. Roughly chop the almonds. Top oats with banana and almonds, add a splash of unsweetened soy/nut/rice milk if desired and enjoy!
