Pomegranate Salsa

A festive and unexpected salsa perfect for holiday potlucks or as a taco topping!
  • Seeds of two pomegranates
  • 1 avocado, cut into chunks
  • ¼ cup chopped fresh cilantro
  • ¼ cup pumpkin seeds
  • ¼ cup vegan cheese crumbles like Kite Hill Soft Fresh Original (optional)
  • Juice of 1 lime
  • Salt and pepper to taste
  1. Combine all ingredients in a bowl and gently fold
  2. Add salt and pepper to taste
  3. Serve with tortilla chips or pita chips
