I was never a fan of Almond Joy candy bars, so I happily picked them out of my Halloween candy stash and gave them to my mom. She loved them. It happens to be her birthday week, so today we dig in to this sweet breakfast and think of her!

Almond Joy Overnight Oats - a cool, satisfying summer breakfast full of chocolate flavor and shredded coconut.
Ingredients
- ½ cup old-fashioned oats
- 1 tbsp ground flaxseed
- 1 cup unsweetened soy/nut/rice milk
- 1 tbsp cocoa powder
- ½ banana
- 1 tbsp almonds
- 1 tbsp shredded coconut
Instructions
- The night before: Combine all ingredients (except the banana and almonds) in a bowl and stir. Cover and refrigerate overnight.
- In the morning: Peel and slice the banana. Roughly chop the almonds. Top oats with banana and almonds, add a splash of unsweetened soy/nut/rice milk if desired and enjoy!
